This margherita is magic

Nonna’s LES Pizzeria might seem like an ordinary slice joint, but the four-year-old parlor best known for square pies has a serious pedigree.

Owner Leon Leandrou perfected his recipes with the help of two Italian cooks, one who shared his grandmother’s southern Italian secrets and the other, says Leandrou, who spent time learning the trade at famed DiFara’s in Brooklyn.

As a result, Nonna’s makes nearly everything from scratch, including their fresh mozzarella, the balsamic vinegar glaze and the pasta in the meaty lasagna ($12.95 served with Parmigiano-Reggiano, bread and butter).

But the art-filled, brick-walled joint — Leandrou removed the drywall to reveal the shop’s 100-year-old frame — is best known for pizzas like the Carciofo (each $6 square is topped with a whole artichoke stuffed with ricotta and house-roasted red peppers) and a square version of the margherita. Sold as “The Magic Slice,” it’s $3.50 and topped with four cheeses: two kinds of mozzarella, Pecorino Romano and Grana Padano.
